Polly's

Polly's Brew Co., operating from an old farm in Mold, North Wales, United Kingdom, has managed to place itself on the world craft map thanks to an almost monastic dedication to modern hoppy styles, especially Pale Ales and Hazy IPAs.

The project was conceived by Sean Clarke, who transformed the family farming business into a brewing mecca, naming the brand in honour of Polly, the farm's mare. Polly's is fascinating for its mastery of mouthfeel. They use very high percentages of oats and wheat in their malt bills, combined with water treatment that favours chlorides, to achieve the silky, cushioned texture characteristic of the best American NEIPAs. They are also known for their dip hopping techniques and massive dry hop loads in their Augment series, where they push the saturation of hop oils such as Citra and Mosaic to the physical limit before the dreaded hop burn appears.
