Wildflower Brewing & Blending is an Australian brewery founded in 2016 by Topher Boehm and Chris Allen in New South Wales, specialising in mixed-fermentation beers, barrel maturation and blending. Its most distinctive feature is fermentation: the brewery uses its own culture made up of different yeasts and bacteria originally collected from native NSW flowers, which is where the name Wildflower comes from.
Its production is closely tied to the origin of its raw materials, working with regeneratively farmed organic grains and local grain, hop and fruit producers. Many of its beers spend time in barrel and are later blended from young and mature batches to seek balance, complexity and a distinctive expression of its fermentation culture.
