Phase Three Brewing Company, operating from Lake Zurich, Illinois, USA, is a relatively recent phenomenon that achieved almost instant cult status after its official launch in 2019. Emerging from the brutally competitive Chicago suburbs scene, the brewery is conceptually defined by its goal of mastering three distinct "phases" of modern brewing with equal skill: intensely aromatic Hazy IPAs, massive-bodied barrel-aged Imperial Stouts, and fruity Smoothie-style Sours. Unlike many brands that specialize in a single niche, Phase Three has achieved the technical feat of being considered elite in these three highly divergent styles simultaneously.
The project was founded by the trio of Evan Morris, David Suh and, crucially, brewmaster Shaun Berns. All three left a very successful stage at another prominent brewery in the area (More Brewing) to seek total creative independence, and Berns' previous fame as an architect of massive stouts ensured Phase Three's initial success even before it opened its doors. From a technical or geek perspective, Berns' obsession lies in manipulating texture and final density.
