Hop Butcher stands out for its masterful manipulation of water chemistry, prioritizing a high chloride-to-sulphate ratio to achieve the silky and chewy mouthfeel characteristic of its NEIPAs. In addition, they are known for their aggressive use of Southern Hemisphere hops such as Galaxy and Vic Secret and for experimenting with high final gravities and estery English yeasts, seeking to maximize biotransformation of hop oils to obtain profiles that recall concentrated tropical fruit juices more than fermented wort.
