Run by the Van Roy-Cantillon family, it functions as a living museum where wort is inoculated exclusively with wild airborne yeasts in an open koelschip, then matured in oak barrels for periods of one to three years. Its certified organic production focuses on pure Lambics, Gueuzes (blends of vintages to achieve natural carbonation) and macerations with fresh seasonal fruit, characterized by a profile of complex acidity, extreme dryness and rustic notes (funk) that define the standard of the style.
