Gueuze Cantillon is a Belgian beer (Gueuze) of spontaneous fermentation. It is produced with organic wheat, barley malt and aged hops, following the traditional gueuze method by blending young and mature lambics.
It is a tart, dry and complex beer, with bottle evolution and a recommended ageing window of up to 20 years from the bottling date.

Brasserie Cantillon, founded in 1900 in the Anderlecht district of Brussels, is the historic world benchmark for spontaneously fermented beer and the last traditional brewery still active within the Belgian capital. Run by the Van Roy-Cantillon family, it functions as a living museum where wort is inoculated exclusively with wild airborne yeasts in an open koelschip, then matured in oak barrels for periods of one to three years. Its certified organic production focuses on pure Lambics, Gueuzes (blends of vintages to achieve natural carbonation) and macerations with fresh seasonal fruit, characterized by a profile of complex acidity, extreme dryness and rustic notes (funk) that define the standard of the style.
