What dry hopping is

Second, some compounds are transformed. Yeast can modify certain aromatic precursors and turn them into molecules with a different sensory impact. This process is known as biotransformation.
Third, some of those compounds are lost. They can volatilise, oxidise, become trapped in the hop plant matter or be carried away by CO2 during fermentation.
Biotransformation: one of the keys to modern IPAs
Biotransformation is one of the most important concepts for understanding why a modern IPA can smell of tropical fruit without containing fruit. Some yeasts can transform compounds from hops into more expressive aromatic molecules.
For example, geraniol can be partially transformed into beta-citronellol, associated with citrus and citronella notes. Some thiol precursors can release aromas of passion fruit, guava, grapefruit or blackcurrant. These molecules have very low perception thresholds, so small amounts can noticeably change the aroma of the beer.

These are some of the most relevant compounds in the aroma of a DDH IPA:
Linalool
Linalool is a terpene alcohol associated with floral, citrus and slightly sweet notes. It is one of the most studied markers of hop aroma.
Geraniol
Geraniol brings floral notes of rose and geranium. It is also important because it can participate in biotransformation pathways that generate other aromatic compounds.
Beta-citronellol
Beta-citronellol is associated with citrus, citronella and lime notes. It can appear as a result of the transformation of geraniol during fermentation.
Myrcene

DDH does not always mean better
More hops does not automatically mean better beer. The technical literature on dry hopping shows that there is a saturation point: beyond a certain dose, extraction no longer increases proportionally. In other words, doubling the amount of hops does not always double the aroma.

- oxidation: rapid loss of aroma, dull colour and sweet or cardboard-like notes;
- hop burn: rough, vegetal or spicy sensation in the throat;

- diacetyl: buttery notes if secondary fermentation is not controlled;

What hop burn is
Hop burn is a rough, green or irritating sensation that can appear in beers with very high cold hop charges. It is relatively common in some freshly packaged or poorly stabilised Hazy IPAs.

DDH, DIPA and TIPA

Is a DDH IPA more bitter?
