Water, malt, hops and yeast: four ingredients that, in different hands, give rise to completely different worlds. Science explains how each one reacts; the art lies in deciding how much prominence to give it. That is what craft beer is about: balancing technique, intuition and respect for the product.
Water
It represents more than 90% of a beer's content and yet often goes unnoticed. Its mineral composition defines how the other ingredients express themselves. Waters rich in calcium and sulphates, such as those of Burton-upon-Trent in England, enhance hop bitterness and produce IPAs with a dry, clean finish. Softer waters, such as those of Pilsen, soften the flavour and bring balance to Czech lagers.
Today, brewers adjust their water with millimetric precision. Small doses of salts change mouthfeel, wort pH and the perception of sweetness. What once depended on the place of origin can now be controlled to reproduce classic styles or explore new profiles.
Malt
If water is the base, malt is the body. From barley - and sometimes wheat or rye - comes the source of sugars that yeast will transform into alcohol. But malt does much more: it defines colour, mouthfeel and sweet or roasted nuances.
A pale malt will bring notes of bread or cereal, while a more roasted malt will introduce hints of caramel, cocoa or coffee. In dark styles such as stouts or porters, heavily roasted malts are responsible for those deep aromas reminiscent of mocha or dark chocolate. It all depends on the degree of kilning, which technicians measure in Lovibond or SRM.
Hops
Hops balance the natural sweetness of malt and bring the aromatic character so recognisable in modern beers. Their flowers provide bitter resins and essential oils that can recall tropical fruit, flowers or pine resin.
The moment they are added makes the difference. If hops enter at the start of the boil, bitterness dominates. If they are added at the end or even after fermentation - in what is known as dry hopping - they enhance aroma without adding harshness. In recent years, varieties such as Citra, Mosaic and Nelson Sauvin have expanded the sensory spectrum, taking IPAs towards fruitier and more expressive profiles.
Yeast
It is the invisible engine of fermentation and one of the ingredients least understood by the general public. Each yeast strain acts like a signature: some leave beers clean and precise; others generate fruity or spicy aromas.
Ale yeasts work at higher temperatures and are responsible for the fruity profiles of an IPA or a hefeweizen. Lager yeasts, by contrast, ferment cold, producing smooth and precise pilsners. And in more experimental territory, wild yeasts such as Brettanomyces or Lactobacillus bring acidity and funky notes typical of lambics or sours.
Beyond the four ingredients
Today's brewing creativity has expanded the repertoire with fruit, spices, cocoa or coffee, and with local ingredients that express their environment. That experimentation does not contradict tradition: it extends it. The base remains the same, but the possible combinations are almost infinite.
