Mosaic hop offers a broad aromatic profile of tropical fruits, citrus and stone fruits, such as mango, lemon, lime and peach. It can also show nuances of pine, herbs and red berries, making it extremely attractive for beers with complex and multilayered flavour profiles. These aromas come from its rich concentration of monoterpenes such as myrcene, which contributes fruity notes, and pinene, which adds pine nuances. This versatility makes it a hop variety widely used in the Craft industry.
Alpha acid levels in Mosaic usually range between 11.5% and 13.5%, making it suitable both for providing bitterness and for aromatic use. Beta acid levels are also relatively high, contributing to its ability to provide smooth and pleasant bitterness.
It was released to the market in 2012 and is a product of Hop Breeding Company in the United States. Mosaic (mosaico in Spanish) is the commercial name of the HBC 369 variety, the result of a cross between female Simcoe and a male Nugget hop variety.
